BBQ Ribs

What better way to end a long day of surfing in Ericeira than with a BBQ? This BBQ Ribs recipe is so delicious, our chef Mikey almost didn’t want to share it! Impress friends at your next BBQ or try it at Portugal camp.

Add to the Ribs our amazing BBQ sauce, directly from Chef Mikey’s kitchen, making the ribs juicy and sticky, just how they are supposed to be!

  • Instructions.
  • Ingredients.
    • Preheat the oven to 175°c and season the ribs with salt and pepper. Drizzle a bit of oil over them, cover with tin foil and put in the oven to roast for 90 minutes.
    • Meanwhile, prepare the BBQ sauce by cutting the bacon and onion into fine cubes. Grab a frying-pan and sauté them together with the star anise.
    • Then add the coca-cola and reduce the mixture to a syrup – stirring regularly. Allow the mixture to cool slightly, then mix in the ketchup, mustard and Worcester sauce. Add salt and pepper to taste.
    • Once the ribs are tender, remove them from the oven. Marinate with the BBQ sauce a place on a hot grill. Char for 7-10 minutes, turning them frequently.
    • Remove from grill, cut between ribs to separate and serve.

    • For the ribs:
    • Pork spare ribs 2 racks
    • Salt
    • Pepper

    • For the BBQ sauce:
    • Coca Cola 600ml
    • Ketchup
    • Mustard
    • Worcester sauce
    • Medium sized onion
    • Star anise
