Minchi with
Coconut Rice

This recipe, inspired by our Chef Mikey’s childhood in Malaysia, is a delight. He grew up eating delicious Minchi with Coconut Rice – a ground meat dish originating from Macao, China. We serve this easy-to-prepare dish with creamy coconut rice.

  • Instructions.
  • Ingredients.
    • First, prepare the Minchi. Heat a large frying pan on medium-high with a drizzle of oil. Sauté the onions together with the potato cubes and bay leaves, cooking until the onions are soft and the potato has coloured slightly.
    • Add the ground beef and the cut garlic cloves, stirring to combine. Once the meat has browned, mix in the soy sauce and the other ingredients; dark soy sauce, a bit of brown sugar, cayenne pepper and salt & pepper to taste.
    • To make the coconut rice, pour the rice and water into a big pot and heat on medium-high. Add the salt, garlic, bay leaves and cardamon. Bring to a boil and cover for 3 minutes.
    • Turn off the heat and leave the pot closed for 15 minutes. Add olive oil and the coconut milk and mix everything together.
    • Serve with Minchi and enjoy!
    • For the Minchi:
    • Ground Beef 500g
    • Potato, peeled and cubed 300g
    • Medium-sized onion, chopped 1
    • Cloves of garlic, chopped 3
    • Soy sauce 50ml
    • Dark soy sauce (or teriyaki sauce) 30ml
    • Brown Sugar
    • Cayenne pepper
    • Salt
    • Black pepper

    • For the Coconut Rice:
    • Basmati Rice 800g
    • Cloves of garlic 2
    • Bay Leaves 2
    • Cardamon, whole 3pcs
    • Olive oil 30ml
    • Coconut milk 250ml
    • Salt
