One of everyone’s favorite dishes from our surf camp in Ericeira, Portugal is the Cornflakes Schnitzel. We’ve freshened it up a bit by replacing the breadcrumbs with crunchy breakfast cereal for a juicy chicken recipe that will surely make your mouth water.

  • Instructions.
  • Ingredients.
    • Begin by slicing your chicken breasts into thin cuts, seasoning them with salt and pepper. Next crush the cornflakes using a blender and mix in the chopped parsley, garlic powder and cayenne pepper.
    • Place cornflakes and flour on separate plates and put the eggs in a shallow bowl, beating them lightly. Bread the Schnitzel dipping it in the flour, followed by the eggs and lastly the cornflake mix.
    • Tip: Make sure the chicken breast are well coated on all sides.
    • Heat the oil in a deep frying-pan on medium heat or use a deep fat fryer, if available. In the meantime, prepare a large plate with kitchen roll.
    • Fry the the Schnitzel for 3 minutes on both sides, until crispy and golden brown. Remove  onto the kitchen roll and gently remove the excess fat.
    • Serve immediately with a salad or new potatoes and enjoy!

    • All-purpose flour 60g
    • Parsley, chopped 15g
    • Garlic powder 5g
    • Cayenne pepper 5g
    • Salt
