One of everyone’s favorite dishes from our surf camp in Ericeira, Portugal is the Cornflakes Schnitzel. We’ve freshened it up a bit by replacing the breadcrumbs with crunchy breakfast cereal for a juicy chicken recipe that will surely make your mouth water.

Cornflakes Schnitzel food at Rapturecamps Portugal Ericeira

Ingredients.

- Begin by slicing your chicken breasts into thin cuts, seasoning them with salt and pepper. Next crush the cornflakes using a blender and mix in the chopped parsley, garlic powder and cayenne pepper.
- Place cornflakes and flour on separate plates and put the eggs in a shallow bowl, beating them lightly. Bread the Schnitzel dipping it in the flour, followed by the eggs and lastly the cornflake mix.
- Tip: Make sure the chicken breast are well coated on all sides.
- Heat the oil in a deep frying-pan on medium heat or use a deep fat fryer, if available. In the meantime, prepare a large plate with kitchen roll.
- Fry the the Schnitzel for 3 minutes on both sides, until crispy and golden brown. Remove onto the kitchen roll and gently remove the excess fat.
- Serve immediately with a salad or new potatoes and enjoy!
