Vegan Tacos

This vegan tacos dish is so full of texture and flavor, you’ll forget that it doesn’t contain meat! Who needs ground beef when you can fill tacos with fresh avocados, peppers, tomatoes, and onions? A break from the typical tacos and a much healthier option for you, these vegan tacos bring lots of vitamins and flavor. Also, they are fairly simple to make.

  • Instructions.
  • Ingredients.
    • First, peel & finely slice the onion and peppers. Heat up 1 tablespoon of olive oil in a large frying-pan on medium heat and add the onions and peppers, cooking till softened. Peel, slice and add the garlic along with the paprika powder and cumin – cook for 1-2 minutes.
    • For the salsa; roughly chop the tomatoes into cubes and finely slice the spring onion. Add these to a bowl alongside some chopped coriander. Squeeze in some lime juice and season to taste.
    • For the guacamole; halve and de-stone the avocados and remove the flesh into a bowl. Mash the flesh with a fork. Squeeze in some lime juice, add the creme fraiche and season to taste – gently mixing.
    • Finally, spread the taco shells out on a baking tray and place in the oven for 3 to 4 minutes until crisp. Fill the taco shells with the bell pepper mix, salsa and guacamole – stack together so you have 3 layers for each taco.

    • Creme fraiche 150g
    • Olive oil
    • Salt
    • Lime 2
